                                      A plate heat exchanger is a compact type of heat exchanger that uses a series of thin plates to transfer heat between two fluids.
                                       Heat exchanger functions by transferring heat from higher to lower temperatures. Heat can thus be transferred from the hot fluid to the cold fluid if a hot fluid and a cold fluid are separated by a heat-conducting surface. The operation of a heat exchanger is governed by thermodynamics.
                                      In the food and beverage industry, plate heat exchangers are used for pasteurization, sterilization, and cooling of products like milk, juices, and sauces.
                                      They are also employed for heating or cooling water for various food processing applications.

                                      The heat transfer plates with gaskets are arranged in an alternating pattern of left-hand flow and right-hand flow to direct the fluids in an opposing direction within the heat exchanger.
                                      A plate heat exchanger is the lowest cost option because it can achieve high heat transfer coefficients - with pure counter current flow - giving the most efficient heat transfer and lowest surface area.
                                      The size of a plate can range from a few square centimeters up to 2 or 3 square meters . The number of plates in a single exchanger ranges from just ten to several hundred, so reaching surface exchange areas up to thousands of square meters.

                                         Flat plate heat exchangers don't work as well as shell and tube exchangers in cases where there's a large temperature difference between two fluids. It doesn't work well with very high fluid temperatures. The gaskets among plate heat exchangers can restrict temperature limitations.
                                          Flow through a plate heat exchanger may be parallel, cross or counter. Plate heat exchangers usually use counter flow as this is the most efficient type of flow for heat transfer. Counter flow is sometimes known as contra flow.
